Extra virgin is the highest category of olive oil: cold extracted, without further processing and with an acidity of at most 0.8%. Good oil smells of freshly cut grass or tomato and gives a slight peppery tingle in the throat.
In Andalusia the day starts with bread, olive oil and tomato. With this oil you bring that breakfast to the Netherlands.
